Pepper Perfume – lively, piquant and earthy spice

Black pepper in perfumery: the note that adds relief

Piper nigrum, a distilled berry — and the false peppers

Pepper comes from a climbing vine, Piper nigrum, grown in India on the Malabar coast, in Vietnam, in Indonesia and in Madagascar. The berries are harvested while still green; as they dry they wrinkle and blacken, and it is those corns that are steam-distilled to draw out the essential oil. The yield is low and the material fragile. One point deserves clearing up straight away, because it causes the commonest confusion: pink pepper is not a pepper. It is the berry of Schinus molle, a South American tree of the cashew family, fruitier and rosier than true pepper; it has its own collection here. Sichuan pepper does not belong to the genus Piper either: it is a rutaceae, a cousin of citrus fruits, which shows in its lemony facet.

What does black pepper smell like?

Dry, woody, slightly earthy, with an almost lemony opening that comes from limonene and a resinous green-wood facet. There is nothing burning about it: piperine, the molecule that makes the corn hot on the tongue, is not volatile and does not carry into the essence. The tingling one feels when smelling a peppery perfume is a trigeminal sensation — the same nerve that detects the cold of mint and the heat of wasabi — and not a smell in the strict sense. Compared with its neighbours, black pepper is drier and darker than pink pepper, less camphorous than cardamom, less soapy than ginger and far less sweet than cinnamon.

Black pepper perfumes at Le Soleil d'Or

RADICAL ROSE by Matiere Premiere, composed by Aurelien Guichard, shows exactly what pepper can do: it electrifies a rose without ever stepping in front of it. Poivre Sacre by Caron takes the opposite road and makes it the subject, over a base of incense and patchouli. At Creed, Himalaya uses it to wake up a clear woody of sandalwood and cedar. Pas ce Soir by BDK Parfums, signed by Violaine Collas, sets it on a powdery floral, and Papyrus Moleculaire by Maison Crivelli, by Leslie Girard, places it in a dry, mineral woody. To smell Sichuan pepper and its citrus facet, PATCHOULI SICHUAN by La Closerie des Parfums makes the demonstration.

Black pepper accords and fragrance families

Pepper sits at the heart of spicy perfumes, but it turns up everywhere else too. Its historic function is to open woody perfumes, where it gives an immediate edge to cedar, vetiver and sandalwood. Over a rose it produces the most widely used accord in contemporary perfumery, the one that pulled the flower out of its powdery register. It also structures leather perfumes and oriental perfumes alongside oud and cumin, and serves as a dry counterpoint to amber perfumes and to vanilla, which it keeps from turning syrupy.

Who is it for, and when?

Pepper is unreservedly unisex: it is a note of texture rather than of character, and it carries no gendered connotation. It works in every season, with a slight advantage in between seasons and in autumn, where its dryness suits woollens. Its staying power is that of a top and heart note: the first twenty minutes are the most peppery, then the effect fades and the base decides. On warm skin the tingling amplifies and can become irritating if the perfume is sprayed too close to the face — hold the bottle twenty centimetres away and the effect is truer.

How to choose your black pepper perfume

One thing has to be accepted before searching: a perfume “with pepper” is almost always something else with pepper in it. The note is used at a few per cent, it is there to give relief, and the compositions where it really takes the lead can be counted on one hand. The right question is therefore not “which one smells most of pepper” but “what is the pepper bringing out”. The bespoke discovery box brings together five 2 mL samples composed by hand, each to be worn for a full day. To get your bearings, compare pepper as an enhancer, RADICAL ROSE, where it serves the rose, with pepper treated as the subject, Poivre Sacre.
