Ginger Perfume – zesty, citrusy and warm spice

Ginger in perfumery: the note that does not burn

A distilled rhizome, and a heat that stays in the field

Zingiber officinale is grown in India, China, Nigeria and Madagascar; it is neither a root nor a fruit but a rhizome, an underground stem. It is steam-distilled, sometimes after drying, and that is where the most common misunderstanding on the whole palette arises. The burning sensation we know in cooking is not a smell but the work of gingerols, heavy molecules that act on the heat receptors in the mouth. Those molecules are not volatile: they do not rise in the still and are not found in the essence. The perfumer therefore receives a ginger stripped of its heat, of which only the fresh part remains. There is also a supercritical CO2 extract, truer to the fresh rhizome and rounder, and a darker absolute, but none of the three burns.

What does ginger smell like?

Fresh, sparkling, frankly lemony, with a soapy facet that often surprises on first acquaintance and a peppery dryness in the background. We are closer to lime and pepper than to cinnamon, with which it is spontaneously associated because both live in the same kitchen cupboard. Compared with cardamom, its closest neighbour, it is less camphorous, earthier, a little greener. Its natural place is at the top and the start of the heart: it gives momentum to the first few minutes, then hands over. A perfume that seems to smell of ginger for a long time almost always owes it to what sits beneath.

Neroli Botanica by Essential Parfums, signed by Anne Flipo, uses it to sharpen a sunlit floral and shows its lemony facet clearly. Erba Gold by Xerjoff places it in a fruity hesperidic where it acts as the nerve. Santal Volcanique by Maison Crivelli, composed by Richard Ibanez, sets it instead on a milky woody base, which gives it an altogether different relief. God of Fire by Stephane Humbert Lucas takes it towards oud and the dark. More classical, Erolfa by Creed uses it in a marine, airy register.

Ginger accords and fragrance families

Ginger belongs to spicy perfumes, but it works above all as a citrus accelerator: with bergamot, lemon and grapefruit, it gives hesperidic perfumes a bite that citrus alone does not have. Over a base of sandalwood or cedar, it produces those clear, dry woody perfumes that contemporary perfumery is so fond of. With cardamom, saffron and oud, it joins oriental perfumes and turns denser. Finally, paired with neroli and orange blossom, it keeps white florals from turning sugary.

Who is it for, and when?

Ginger is unisex without argument and ranks among the easiest spices to wear, precisely because it does not warm. It is a daytime note, suited to the office and to shared spaces, and its sparkling freshness makes it an ally of spring and summer — the opposite of what the word “spice” leads you to expect. Compositions that pair it with a woody or amber base carry winter very well, but then it is the base that carries the perfume. One thing to know before buying: if you are after the biting warmth of candied ginger or of an infusion, no essence will give it to you. For that you have to look towards cinnamon or pepper.

How to choose your ginger perfume

Start by smelling the material on its own if you get the chance, in a boutique: it is the quickest way to let go of the heat and smell what the note actually does. After that the question becomes one of setting — a ginger over citrus and a ginger over wood have almost nothing in common. The bespoke discovery box brings together five 2 mL samples composed by hand, each to be worn for a full day. To get your bearings, compare a ginger sharpening a clear floral such as Neroli Botanica with a ginger set on a milky woody base such as Santal Volcanique.
