Saffron in perfumery: the most expensive spice, and what you actually smell

One hundred and fifty thousand flowers for a kilo

Saffron is the stigma of Crocus sativus, a small mauve flower that opens in autumn and yields only three red threads. They are picked by hand at dawn, before the flower wilts, then dried — it is the drying that develops the smell, the fresh flower barely smells of anything. It takes around one hundred and fifty thousand flowers for a kilo of dried saffron, which makes it the most expensive spice in the world, grown in Iran, Kashmir, Morocco, Spain and on a few hectares in the Quercy. What happens next in perfumery has to be said plainly: at that price, natural saffron is almost never used as such, and its absolute remains a laboratory curiosity. The saffron note of niche perfumes comes overwhelmingly from safranal, the odorous molecule of dried saffron, and above all from the leathery molecules of the safraleine family, which appeared in the 1980s. When a perfume announces saffron, it is almost always that palette it is talking about.

What does saffron smell like?

Far less “spicy” than the word suggests, if you are thinking of the culinary sense. The real smell is leathery first, with an iodine, almost marine facet, a medicinal edge and a base of dry, faintly honeyed hay. There is a metallic bitterness in the background that explains its immediate kinship with leather: the molecules that carry one often carry the other. Compared with pepper it does not bite; compared with cardamom it has nothing fresh about it. It is sometimes confused with turmeric, which it resembles in colour and not at all in smell. On skin it settles as a heart note and lasts a long time, staying close to the body.

Saffron accords and fragrance families

Saffron officially belongs to spicy perfumes, but it really works on the side of leather perfumes, where it acts as a bridge between the spice and the skin. Its most sought-after pairing is that of contemporary oriental perfumes: saffron, rose and oud form a triangle that niche perfumery has been reworking relentlessly for twenty years. With amber, labdanum and frankincense it gives dark, resinous bases; with ambroxan and musk, clear and mineral woody perfumes. Over leather or tobacco it sharpens the animalic facet without weighing it down.

Who is it for, and when?

Saffron is unisex, even if the market has pushed it heavily towards men's bottles: nothing in the material assigns it a gender, and saffron-rose readings wear just as well either way. It is, however, a note that gets noticed. Saffron compositions are often powerful, with a frank sillage and several hours of wear, which makes them more at home in the evening, in winter and outdoors than in a meeting or an open-plan office. Two things worth knowing before buying: saffron amplifies a great deal on warm skin, and it should be sprayed sparingly — two presses are almost always enough, three is already too many.

How to choose your saffron perfume

Start by identifying what you are after behind the word: a legible, luminous saffron, or a saffron used as a dark layer beneath another material. These are two very different uses and the label does not tell them apart. Try it on skin and let an hour pass — the note cannot be judged on spraying.
