Coconut in perfumery: a question of lactones
Coconut, a note rebuilt rather than extracted
Contrary to what one imagines, coconut oil has almost no smell: it is a fat, used since forever as a maceration carrier, not as an odorous material. The coconut note in perfumes is therefore entirely constructed, around a family of molecules called lactones — gamma-octalactone and gamma-nonalactone first among them. These are the same ones that carry peach and apricot, which explains the immediate kinship one senses between the three notes. Monoi from Tahiti is not a raw material either: it is a maceration of tiare flower in copra oil, and it is the flower that speaks.
What does coconut smell like?
Coconut in perfumery smells of milk and cream before it smells of fruit. The opening is round, almost buttery, with a fresh-nut facet and a base of pale wood. Depending on the dose it tips one way or the other: light, it gives an impression of warmed skin and clean fabric; heavy, it turns frankly solar, beach cream and white flowers. A green bitterness of husk sometimes appears at the top, which keeps it from becoming cloying. Longevity is good, the trail round and diffuse. It is a base note in disguise: it settles early and stays late.
Coconut perfumes at Soleil d'Or
Bora Bora by Giardini di Toscana gives the most solar reading, monoi and white flowers in full light. At Profumum Roma, Gioiosa and Sabbia Bianca treat it as a dense, almost fatty material in the Italian manner. Un bois vanille by Serge Lutens slips it under a cooked vanilla and a smoky sandalwood, in one of the most copied milky accords in contemporary perfumery. Or du Sérail by Naomi Goodsir takes it towards tobacco, and Histoire Charnelle by Hubert Maës Créations towards skin.

Coconut calls for warmth. With vanilla, tonka bean and benzoin it builds milky gourmand perfumes that rarely stay on sugar. Set on sandalwood or cashmere wood, it gives creamy woody perfumes that wear easily. With ylang-ylang, tuberose and orange blossom it composes the classic solar accord. Citrus and fig serve as the green counterpoint when it needs lightening.
Who is it for, and when?
Coconut is a note of immediate pleasure, and that is also its difficulty: badly dosed, it tips quickly into sun cream. Niche compositions therefore rarely work it alone. It is shared, even if its floral readings lean feminine and its woody ones masculine. Its obvious season is summer, but the milky, woody versions are excellent in winter, where they bring an enveloping softness. It appeals to people who like soft trails and the feeling of clean, warmed skin, and who prefer creaminess to sweetness. On warm skin it blooms fast; on cool skin it stays more discreet.

The first sort is simple: do you want a solar coconut, with white flowers and a holiday feeling, or a milky, woody coconut you can wear all year? The two have almost nothing in common.
