Coffee in perfumery: a roasted bitterness, not a dessert

Coffee, an absolute drawn from the roasted bean

Coffee is among the few gourmand notes that can genuinely be extracted. Coffee absolute is obtained with solvent from the roasted beans of Coffea arabica, and yields a brown, thick, frankly bitter material. An extraction of the green bean also exists, more vegetal and more acidic, and very different. The natural material remains expensive and hard to dose: beyond a few per cent it takes over everything and turns burnt. Perfumers therefore complete it with reconstructions, often built around pyrazine molecules that carry the roasted side. Its closest relative in the palette is cocoa, with which it shares that toasted bitterness.

What does coffee smell like?

Coffee in perfumery smells of the bean, not of the cup. The opening is bitter, dry and faintly smoky, with an acidic edge that recalls freshly ground beans. Then comes a roasted roundness, almost cocoa-like, before a base that drifts towards burnt wood and tobacco. With no sugar around it the effect is frankly dark and adult: nothing like the dessert the word suggests. Add vanilla or milk and the accord tips towards mocha, soft and enveloping. It is a powerful and very tenacious heart note: a few drops mark a composition for hours, and it stays perceptible on fabric long after the rest.

Coffee perfumes at Soleil d'Or

Awake by Akro gives the most literal reading: coffee is the subject, black and undisguised. Kawa Karda Extrait by Atelier des Ors ties it to cardamom, in the manner of an oriental coffee. Coffee calls for bitterness and warmth. With cocoa, vanilla and caramel it composes dark gourmand perfumes that stay on the adult side of sugar. Paired with cardamom, pepper and nutmeg, it gives the spiced-coffee accord. Set on sandalwood, patchouli or leather, it structures very tenacious woody perfumes. Jasmine and orange blossom offer the most interesting contrast, lighting up the bitterness.

Who is it for, and when?

Coffee is an assertive note that is not worn absent-mindedly. It suits people who like dense trails and dark smells, and it frankly displeases those looking for freshness. Shared by nature, it leans masculine in its woody, smoky readings and feminine in its milky, floral ones. Its season is autumn and winter, evenings above all — it becomes stifling in strong heat. It is also a risky office note: its power and longevity make it a perfume that occupies the room. On warm skin the roasted bitterness sharpens noticeably.

How to choose a coffee perfume

Ask the sugar question first: do you want a black coffee, bitter and woody, or a milky, vanillic mocha? The gap between the two is considerable, and it is almost the only decision to make.
