Pink pepper in perfumery: the berry that bites without biting
A South American berry, not a pepper
Pink pepper is badly named. It comes from Schinus molle or Schinus terebinthifolius, two South American trees with no kinship whatsoever to black pepper, which is an Asian vine. Its dried pink berries yield, on distillation, a light essence, far less biting than the colour would suggest. The material entered perfumery on a large scale from the 1990s onwards and has never left: it is today one of the most widely used top notes in the world, to the point where it is instantly recognisable in contemporary launches.
What does pink pepper smell like?
Of a resinous red fruit rather than of a spice. You can detect rose, raspberry, a turpentine edge and a light, airy pungency that tickles without burning. That is exactly what accounts for its success: it brings relief and an impression of spicy freshness without ever weighing things down. It is a top note, volatile, that sets the tone of the first few minutes and then hands over. It also has a rare quality: it makes the notes around it more legible, flowers and citrus especially, like a contrast enhancer.
Pink pepper perfumes at Le Soleil d'Or
Aventus by Creed is the best-known example: pink pepper opens its smoky fruity accord there. Enchanted Forest by The Vagabond Prince, composed by Bertrand Duchaufour, uses it to set up an undergrowth of dark fruit. At BDK Parfums, Rouge Smoking by Amelie Bourgeois pairs it with a smoky gourmand, and 312 Saint-Honore with a powdery accord. Neroli Botanica by Essential Parfums shows its other use clearly: giving relief to an orange blossom.
Pink pepper accords and fragrance families
Pink pepper is a revealer more than a soloist. With citrus perfumes and bergamot, it adds a spicy vibration to openings. Laid over a rose, it wakes up its jammy facets, and with raspberry or blackcurrant, it builds tart fruity accords. It also acts as a dry counterpoint to gourmand perfumes and gives bite to woody perfumes that would otherwise lack vivacity. With cardamom and ginger, it forms the fresh spicy accords that feel very contemporary.
Who is it for, and when?
It is one of the most consensual and most unisex notes in perfumery: legible, modern, never divisive. You will find it equally in compositions presented as masculine or feminine, and it suits every season. Since it is a top note, it does not determine a perfume's personality but its first contact — if you are looking for a perfume that smells of pink pepper all day long, you will not find one. If, on the other hand, you love sparkling, spicy openings, this is the marker to look out for.
How to choose your pink pepper perfume
As with all citrus and top-note spices, the rule is not to judge on the opening. Pink pepper is always seductive in the first minute; what matters is the heart that takes over.
